I'm in the kitchen - Eton Mess Cupcakes11:39
I don't usually have much spare time at the moment to bake but this evening and tomorrow morning I have an excuse. I have been asked to make cupcakes for my boys cricket team's tea.
For once I tried something completely different. Instead of my usual cupcakes with vanilla butter icing I decided to try my hand at something different and I am so pleased with the results.
I LOVE cream and one of my favourite puddings is Eton Mess, so I decided why not make Eaton Mess cupcakes. No different really than a Victoria sponge but hidden in the cream are chunks of meringue.
For those of you who are not sure what Eton Mess is here: 'Eton mess is a traditional English dessert consisting of a mixture of strawberries, pieces of meringue, and cream, which is traditionally served at Eton College's annual cricket game against the pupils of Harrow School. The dish has been known by this name since the 19th century.'
Such simple cakes to make and wow are they super yummy. Its taking my all not to eat them all in one go.
This summer I really wont get much time to bake due to last minute wedding plans but any chance I do get I really want to try new cupcakes instead of sticking to the norm. Its time to be adventurous in the kitchen!
